Growing hyper-local
in Darwin
FRESH - FLAVOURSOME - ALL YEAR ROUND
reimagining fresh food supply for resilience, sustainability and premium quality
a pioneering partnership for innovation in action with Simon George & Sons and Delaware North

The Northern Territory's newest farm is less than 10kms from the Darwin city centre and is capable of growing a wide range of crops, independent of climate, all year round.
InvertiGro has partnered with Simon George & Sons and Delaware North to deliver hyper-local, premium quality fresh produce to the Darwin community and discerning visitors.
The hub-and-spoke indoor farming model is a first for the Northern Territory and uses InvertiGro's commercial-scale InvertiCube growing units (operated by Simon George & Sons) in combination with an InvertiWall on-display at Delaware North's Mindil Beach Casino Resort.

Plants begin their life with Simon George & Sons at Darwin's first commercial-scale indoor farm, just minutes from the resort.
Here, a range of premium fresh produce are grown in InvertiGro's highly efficient, scalable and flexible InvertiCube indoor vertical farming system - with significantly less land and water than traditional farming methods. The produce is also grown without any synthetic herbicides or pesticides, fewer food miles and less waste. All of this, independent of the seasons or the increasingly unpredictable weather outside.
Growing closer to where the produce is needed and reducing the reliance on lengthy food supply chains, cuts out significant food miles and waste, whilst also ensuring continuity of supply, all year round.
The plants continue growing right before diners' eyes in Mindil Beach Casino Resort's Il Piatto restaurant and are harvested as needed to add freshness, flavour and nutrition to the restaurant's creative dishes and drinks.
Chefs enjoy year-round 'on-demand' access to premium quality and out-of-region produce to elevate the dining experience with a range of microgreens, premium herbs and edible flowers harvested from their in-restaurant 'kitchen garden'.
It is innovation, sustainability and creativity in action.

"The InvertiWall has become a powerful addition to our operation, delivering premium-quality micro herbs, edible flowers and specialty greens with exceptional freshness, consistency and visual appeal.
Unlike traditional produce that is freighted long distances from where it is grown, ingredients harvested from the InvertiWall are picked just moments before service, resulting in superior quality, and shelf life enhancing both the presentation and flavour of our menu while significantly reducing waste and supply chain reliance.
Beyond the guest experience, the commercial benefits are clear: reliable year-round supply, reduced costs, fewer stock losses, and access to high-value ingredients that support menu innovation and profitability.
Together with InvertiGro's technology we are reshaping how our business sources premium produce, combining sustainability with genuine commercial value."
